Ingredients
- 2 chicken breasts
- 1 cup sweet chili sauce
- 2 cups mixed vegetables (bell peppers, broccoli, and carrots)
- 1 cup cooked rice or quinoa
- 1/2 cup coconut milk
- Juice of 1 lime
- Salt and pepper to taste
- Cilantro for garnish
Instructions
- Cook the chicken breasts in a skillet over medium heat until cooked through, about 6-7 minutes per side, then remove and let rest.
- Add mixed vegetables to the same skillet and sauté until tender, about 5 minutes.
- Slice the chicken and return it to the skillet, then add sweet chili sauce and cook for an additional 2-3 minutes until heated through.
