Description

A delightful cornbread featuring the rustic goodness of cornmeal complemented by the rich sweetness of honey, perfect for family gatherings or alongside a bowl of chili.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 400°F (200°C) and place a cast iron skillet inside to heat.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the buttermilk, eggs, oil, and honey until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed.
  5. Carefully remove the hot skillet from the oven and grease it lightly with oil.
  6. Pour the batter into the skillet and spread it evenly.
  7. Bake for 20-25 minutes or until the top is golden brown and a toothpick comes out clean.
