Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup honey
- 1/4 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C) and place a cast iron skillet inside to heat.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the buttermilk, eggs, oil, and honey until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just mixed.
- Carefully remove the hot skillet from the oven and grease it lightly with oil.
- Pour the batter into the skillet and spread it evenly.
- Bake for 20-25 minutes or until the top is golden brown and a toothpick comes out clean.
