Ingredients

  • 1 (48 oz / 1360 g) jar dill pickles
  • 1 (8 oz / 227 g) package cream cheese, regular
  • 1 medium onion, very finely chopped
  • 2 large garlic cloves, very finely chopped
  • 3/4 tsp (4 ml) Tabasco sauce or 3/4 tsp (4 ml) hot sauce


Instructions

  1. Trim both ends of the dill pickles to make them flat.
  2. Utilize a slender peeler or sharp blade to hollow out the center of each pickle. The removed core can be set aside for other purposes.
  3. Position the pickles upright on paper towels and allow them to drain thoroughly for about half an hour. Additionally, pass a rolled-up paper towel through the hollowed center to soak up any remaining liquid.
  4. While waiting, in a bowl, combine the cream cheese with the finely chopped onion and garlic, mixing until everything is well incorporated. Stir in the hot sauce until evenly distributed.
  5. Fill each pickle with the cheese mixture using a cake decorating tool or small spoon. Enclose the filled pickles in plastic wrap and chill them until the cheese mixture becomes solid, approximately two hours.
  6. Just before serving, cut the pickles into slices about 3/4 inch thick and arrange them on a serving dish. Store any leftovers in the fridge, covered. These make excellent additions to packed lunches.
  7. Feel free to enhance the filling with finely diced smoked salmon, black olives, or cooked ham. Alternatively, you can blend equal parts of Cheese-Whiz with cream cheese or experiment with various cream cheese flavors available.
