Description

Discover how to make delicious Stuffed Pepper Soup with this easy recipe. Learn the secrets to a flavorful and hearty meal perfect for any occasion!

Ingredients

  • 1 pound ground beef (454 g)
  • 1 green bell pepper, chopped
  • 1 cup (240 ml) finely diced onion
  • 1 (29 ounce (822 g)) can diced tomatoes
  • 1 (15 ounce (425 g)) can tomato sauce
  • 1 (14 ounce (397 g)) can chicken broth
  • 25 teaspoon (1 ml) dried thyme
  • 25 teaspoon (1 ml) dried sage
  • salt and pepper to taste
  • 2 cups (480 ml) water
  • 1 cup (240 ml) white rice

Instructions

  1. Prepare all the necessary items.
  2. Warm a large frying pan over medium-high heat. Sauté the ground beef in the heated pan until it is browned and crumbles easily, approximately 5 to 7 minutes. Remove and discard the excess fat.
  3. Incorporate the chopped green bell pepper and diced onion; stir and cook until the onion becomes soft and see-through, roughly 5 minutes.
  4. Mix in the diced tomatoes, tomato sauce, chicken broth, dried thyme, and dried sage; season with salt and pepper. Put a lid on and let it simmer until the peppers are soft, around 30 to 45 minutes.
  5. Meanwhile, in a separate pot, bring the water and white rice to a boil. Lower the heat to medium-low, cover, and let it cook until the rice is soft and the water has been absorbed, about 20 to 25 minutes.
  6. Combine the cooked rice with the soup; warm it thoroughly and serve.

Notes

  • For a lighter option, use lean ground beef to reduce the dish’s fat content.
  • Add extra vegetables like carrots or celery for more nutrition and flavor.
  • Adjust the seasoning to suit your taste by adding more herbs or spices as desired.
