Ingredients

  • – 2 tablespoons (30 ml) olive oil
  • – 1 1/2 pounds (680 g) lean ground beef
  • – 1 yellow onion, diced
  • – 1 medium red bell pepper, diced
  • – 1 medium green bell pepper, diced
  • – 3 small cloves garlic, minced
  • – 1 teaspoon (5 ml) Italian seasoning or cajun seasoning
  • – 2 teaspoons (10 ml) Worcestershire sauce
  • – 1/2 teaspoon (3 ml) salt
  • – 1/4 teaspoon (1 ml) ground black pepper
  • – 14 ounces (400 g) canned diced tomatoes
  • – 1 cup (240 ml) long grain white rice
  • – 1 1/2 cups (360 ml) beef broth
  • – 1 1/2 cups (180 g) shredded cheese, cheddar, mozzarella, or both
  • – parsley for garnish


Instructions

  1. Set your oven to preheat at 350°F/180°C. Warm olive oil in a pan or heatproof skillet over medium-high heat, then add the ground beef. Cook the meat, breaking it apart with a spatula, until it loses its pink color. Once cooked, drain the excess fat and toss in the diced onion and bell peppers. Sauté for 2-3 minutes.
  2. Incorporate minced garlic, your choice of seasoning, Worcestershire sauce, salt, and black pepper. Stir and cook for about 30 seconds. Mix in the canned diced tomatoes.
  3. Pour in the long grain white rice and beef broth, ensuring everything is well combined. Bring the mixture to a boil, cover with a lid or foil if your dish lacks a lid, and transfer it to the oven. Bake for 20-25 minutes, checking if the rice is tender by tasting it. If it needs more time or liquid, add a splash of water and return it to the oven.
  4. Once the rice is cooked, take the dish out of the oven and spread the shredded cheese on top. Return it to the oven and broil for 3-5 minutes until the cheese is melted and bubbly. Garnish with chopped parsley before serving.
