Ingredients
- – 2 tablespoons (30 ml) olive oil
- – 1 1/2 pounds (680 g) lean ground beef
- – 1 yellow onion, diced
- – 1 medium red bell pepper, diced
- – 1 medium green bell pepper, diced
- – 3 small cloves garlic, minced
- – 1 teaspoon (5 ml) Italian seasoning or cajun seasoning
- – 2 teaspoons (10 ml) Worcestershire sauce
- – 1/2 teaspoon (3 ml) salt
- – 1/4 teaspoon (1 ml) ground black pepper
- – 14 ounces (400 g) canned diced tomatoes
- – 1 cup (240 ml) long grain white rice
- – 1 1/2 cups (360 ml) beef broth
- – 1 1/2 cups (180 g) shredded cheese, cheddar, mozzarella, or both
- – parsley for garnish
Instructions
- Set your oven to preheat at 350°F/180°C. Warm olive oil in a pan or heatproof skillet over medium-high heat, then add the ground beef. Cook the meat, breaking it apart with a spatula, until it loses its pink color. Once cooked, drain the excess fat and toss in the diced onion and bell peppers. Sauté for 2-3 minutes.
- Incorporate minced garlic, your choice of seasoning, Worcestershire sauce, salt, and black pepper. Stir and cook for about 30 seconds. Mix in the canned diced tomatoes.
- Pour in the long grain white rice and beef broth, ensuring everything is well combined. Bring the mixture to a boil, cover with a lid or foil if your dish lacks a lid, and transfer it to the oven. Bake for 20-25 minutes, checking if the rice is tender by tasting it. If it needs more time or liquid, add a splash of water and return it to the oven.
- Once the rice is cooked, take the dish out of the oven and spread the shredded cheese on top. Return it to the oven and broil for 3-5 minutes until the cheese is melted and bubbly. Garnish with chopped parsley before serving.
