Ingredients

  • 1 (283 g) package frozen chopped spinach, thawed and drained
  • 60 g grated Parmesan cheese
  • 120 ml chopped onion
  • 4 bone-in chicken breast halves
  • 475 ml tomato sauce
  • 60 ml shredded mozzarella cheese


Instructions

  1. Set your oven to 350 degrees F (175 degrees C) to preheat.
  2. In a medium-sized bowl, thoroughly blend the spinach, Parmesan, and onion.
  3. Divide the mixture into four parts, filling the cavity of each chicken breast with one portion.
  4. Arrange the filled chicken pieces in a 9×13-inch baking dish, then pour tomato sauce over them.
  5. Cook in the preheated oven until the chicken is fully cooked and the juices are clear, approximately 35 minutes. Ensure an internal temperature of at least 165 degrees F (74 degrees C) with a meat thermometer.
  6. Scatter mozzarella cheese on top and continue baking until the cheese is melted, roughly 5 more minutes.
