Ingredients
- 1 medium yellow onion (150g)
- 2 cloves garlic
- 1 pound green cabbage (about 1/2 medium head) (450g)
- 2 medium carrots (about 8 ounces) (225g)
- 1 tablespoon olive oil (15ml)
- 1 pound lean ground beef (450g)
- 1 1/2 teaspoons (8 ml) paprika
- 1 teaspoon (5 ml) salt, plus more for seasoning
- 1/4 teaspoon (1 ml) freshly ground black pepper, plus more for seasoning
- 1 (32-ounce) box beef broth (946ml)
- 1 (14.5-ounce) can diced tomatoes (411g)
- 1 (8-ounce) can tomato sauce (227g)
- 1 cup water (240ml)
- 2 tablespoons (30 ml) packed light brown sugar
- 1 tablespoon (15 ml) Worcestershire sauce
- 1 teaspoon (5 ml) apple cider vinegar
- 1 bay leaf
- 1/2 cup uncooked long-grain white rice (90g)
- 2 tablespoons (30 ml) fresh parsley leaves, for garnish (optional)
Instructions
- Chop the medium yellow onion into small pieces, mince the garlic cloves, and place them together in one bowl. Cut the green cabbage into 1-inch squares and dice the carrots, then place these in a second bowl.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat until it shimmers. Add the chopped onion, minced garlic, lean ground beef, and paprika. Sprinkle with salt and black pepper, then cook, using a wooden spoon to break the beef into smaller bits, until the meat is browned and the onion is soft, approximately 10 minutes.
- Pour in the beef broth, using the wooden spoon to scrape any browned bits from the bottom of the pot. Add the diced tomatoes with their juices, tomato sauce, water, brown sugar, Worcestershire sauce, apple cider vinegar, and a bay leaf. Stir everything together and bring to a boil over high heat.
- Introduce the cabbage, carrots, and uncooked white rice to the pot. Lower the heat to keep a gentle simmer, and cook, stirring occasionally, until the rice and cabbage are soft, which should take about 30 minutes. Meanwhile, if you wish, roughly chop the fresh parsley leaves.
- Remove the bay leaf from the soup. Taste and adjust the seasoning with additional salt and pepper if needed. If desired, add the chopped parsley as a garnish before serving.
