Ingredients
- 3 bell peppers (675g)
- 2 Tbsp vegetable oil (divided, 30ml)
- 1 lb beef sausage (454g)
- 1 yellow onion (diced, 150g)
- 3 garlic cloves (minced, 9g)
- 1 tsp Italian seasoning (5g)
- 1/2 tsp garlic powder (2.5g)
- 1 1/4 tsp salt (divided, 6g)
- 1/4 tsp black pepper (freshly cracked, 1g)
- 1 cup marinara sauce (240ml)
- 1/2 cup long grain white rice (uncooked, 105g)
- 3/4 cup beef broth (180ml)
- 1 cup mozzarella cheese (shredded, 125g)
Instructions
- Begin by setting the oven to 350°F. Rinse and pat dry each bell pepper, then slice them horizontally into two equal parts. Carefully detach the stem from the upper portion of each pepper using a sharp paring knife. It’s fine if a small opening remains where the stem was removed.
- Arrange each pepper half in a 9×13-inch baking dish. Coat the peppers with 1 tablespoon of oil and sprinkle ¼ teaspoon of salt along with ¼ teaspoon of cracked black pepper. Place the peppers in the oven to bake for 20 minutes until they start to soften. Once done, take them out and set them aside.
- Meanwhile, as the peppers bake, prepare the filling. Heat a large pan over medium heat and pour in 1 tablespoon of oil. Cook the beef sausage until it browns.
- After the sausage is browned, add the chopped onion and minced garlic to the pan. Continue cooking over medium heat until the onion becomes clear and the garlic releases its aroma.
- Then, incorporate the uncooked rice, marinara sauce, Italian seasoning, garlic powder, 1 teaspoon of salt, and beef broth into the pan. Mix well to combine everything.
- Cover the pan with a lid, increase the heat to medium-high, and wait for the mixture to reach a rolling boil. Once it boils, lower the heat to medium-low and let it simmer for 20 minutes without removing the lid or stirring. Afterward, switch off the heat and let it sit, still covered, for 5 more minutes.
- After resting, remove the lid, fluff the rice, and stir to evenly distribute the ingredients. Proceed to stuff each bell pepper with the meat mixture, filling them completely to the top.
- Sprinkle shredded mozzarella cheese evenly over each filled pepper. Place loosely tented aluminum foil over the baking dish and return it to the oven for 15 minutes. The peppers should be tender but not overly soft at this point.
- Finally, take off the foil and switch the oven setting to broil. Broil the peppers for 2-3 minutes until the cheese develops a light golden color. Keep a close eye to avoid over-browning. Optionally, garnish with parsley before serving and enjoy!
