Description
A creamy cheese soup with ground meat that warms the heart and soul.
Ingredients
- 500 g ground meat (beef or a mix)
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 bell pepper, diced
- 1 can (400 g) diced tomatoes
- 1 liter vegetable or beef broth
- 200 g creamy cheese
- 2 tbsp tomato paste
- 1 tsp sweet paprika
- Salt and pepper to taste
- 1 tsp oregano or basil
- 1 tbsp oil for sautéing
Instructions
- Heat the oil in a large pot over medium heat. Add the ground meat, diced onion, and minced garlic, cooking until golden brown.
- Toss in the sliced carrots and diced bell pepper, sautéing for a few minutes.
- Stir in the tomato paste to coat the meat and vegetables evenly.
- Add the diced tomatoes and broth, stirring to combine.
- Season with paprika, salt, pepper, and oregano or basil. Let it simmer for about 15 minutes.
- Introduce the creamy cheese, stirring until the soup is creamy. Let it rest for an additional 5 minutes before serving.
Notes
For a thicker soup, reduce broth or simmer longer. Adjust seasonings to taste.
