Description
Delicious strawberry rolls that combine fresh strawberries with fluffy dough, perfect for breakfast or a sweet treat.
Ingredients
- 1 cup whole milk, warmed to 105°-110°F
- 2 1/4 tsp active dry yeast
- 1/4 tsp sugar (to activate the yeast)
- 6 tbsp unsalted butter, melted
- 2 large eggs, at room temperature
- 1/2 cup white granulated sugar
- 4 cups all-purpose flour (spooned and leveled; add extra flour if too sticky)
- 1 tsp salt
- 2 cups fresh strawberries, washed, hulled, and sliced
- 1 tsp fresh lemon juice
- 1/3 cup white granulated sugar (for the strawberry filling)
- 1 tbsp water (for the filling preparation)
- 2 tbsp cornstarch (for the filling)
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- Zest of one lemon
- 2 tbsp whole milk (for the icing)
Instructions
- Combine the warm milk, yeast, and 1/4 tsp of sugar in a bowl. Allow it to sit for 5-10 minutes until frothy.
- In a separate bowl, beat together melted butter, eggs, and 1/2 cup sugar.
- Add the yeast mixture to this bowl and mix well.
- Gradually incorporate flour and salt, mixing until the dough forms a soft ball. Knead for about 10 minutes, adding flour as needed.
- Place the dough in a greased bowl, cover it, and let it rise in a warm spot for 1-2 hours until doubled in size.
- Prepare the strawberry filling by combining sliced strawberries, 1/3 cup sugar, lemon juice, water, and cornstarch in a saucepan. Cook over medium heat until thickened, about 10 minutes. Allow it to cool.
- Once the dough has risen, punch it down, roll it out onto a floured surface, and spread the strawberry filling evenly.
- Roll the dough tightly and cut it into slices. Place the slices in a greased baking dish and let them rise again for about 30 minutes.
- Bake in a preheated oven at 375°F for 20-25 minutes or until golden brown.
- For the icing, combine softened cream cheese, butter, powdered sugar, lemon zest, and whole milk in a bowl until smooth.
- Once cooled, drizzle the icing over the rolls and enjoy!
