Description

Delicious strawberry rolls that combine fresh strawberries with fluffy dough, perfect for breakfast or a sweet treat.


Ingredients

  • 1 cup whole milk, warmed to 105°-110°F
  • 2 1/4 tsp active dry yeast
  • 1/4 tsp sugar (to activate the yeast)
  • 6 tbsp unsalted butter, melted
  • 2 large eggs, at room temperature
  • 1/2 cup white granulated sugar
  • 4 cups all-purpose flour (spooned and leveled; add extra flour if too sticky)
  • 1 tsp salt
  • 2 cups fresh strawberries, washed, hulled, and sliced
  • 1 tsp fresh lemon juice
  • 1/3 cup white granulated sugar (for the strawberry filling)
  • 1 tbsp water (for the filling preparation)
  • 2 tbsp cornstarch (for the filling)
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • Zest of one lemon
  • 2 tbsp whole milk (for the icing)


Instructions

  1. Combine the warm milk, yeast, and 1/4 tsp of sugar in a bowl. Allow it to sit for 5-10 minutes until frothy.
  2. In a separate bowl, beat together melted butter, eggs, and 1/2 cup sugar.
  3. Add the yeast mixture to this bowl and mix well.
  4. Gradually incorporate flour and salt, mixing until the dough forms a soft ball. Knead for about 10 minutes, adding flour as needed.
  5. Place the dough in a greased bowl, cover it, and let it rise in a warm spot for 1-2 hours until doubled in size.
  6. Prepare the strawberry filling by combining sliced strawberries, 1/3 cup sugar, lemon juice, water, and cornstarch in a saucepan. Cook over medium heat until thickened, about 10 minutes. Allow it to cool.
  7. Once the dough has risen, punch it down, roll it out onto a floured surface, and spread the strawberry filling evenly.
  8. Roll the dough tightly and cut it into slices. Place the slices in a greased baking dish and let them rise again for about 30 minutes.
  9. Bake in a preheated oven at 375°F for 20-25 minutes or until golden brown.
  10. For the icing, combine softened cream cheese, butter, powdered sugar, lemon zest, and whole milk in a bowl until smooth.
  11. Once cooled, drizzle the icing over the rolls and enjoy!
