Ingredients
- 1 cup almond flour
- 1/2 cup protein powder (strawberry flavor recommended)
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 1/4 cup erythritol (or sweetener of choice)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup diced strawberries
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large mixing bowl, combine the almond flour, protein powder, erythritol, baking powder, baking soda, and salt.
- In another bowl, whisk together the applesauce, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced strawberries, ensuring you don’t overmix the batter.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool before enjoying.
Notes
For added sweetness, sprinkle a little erythritol on top before baking. Experiment with spices like a pinch of cinnamon for extra flavor.
