Description

Delicious and nutritious strawberry protein muffins, perfect for a healthy breakfast or snack.


Ingredients

  • 1 cup almond flour
  • 1/2 cup protein powder (strawberry flavor recommended)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1/4 cup erythritol (or sweetener of choice)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced strawberries
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large mixing bowl, combine the almond flour, protein powder, erythritol, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the applesauce, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the diced strawberries, ensuring you don’t overmix the batter.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes
