A light and airy strawberry mousse that brings together fresh strawberries and rich cream to create a delightful dessert.
Ingredients
- 1 1/2 tablespoons unflavored gelatin
- 1/4 cup strawberry nectar juice
- 1/2 cup water
- 2 1/2 pounds strawberries (divided)
- 8 tablespoons granulated sugar (divided)
- 2 cups heavy whipping cream (cold)
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 1/2 cups heavy whipping cream (cold)
- 4 tablespoons powdered sugar
- Fresh strawberries for garnish
Instructions
- Add water and strawberry juice to a small bowl, sprinkle gelatin on top, and let it stand for 5-10 minutes.
- Hull and chop 1 1/2 pounds of strawberries, sprinkle with 4 tablespoons sugar, and let sit for 5-10 minutes.
- Pulse chopped strawberries in a food processor until smooth.
- In a separate bowl, whip heavy cream, vanilla, lemon juice, and powdered sugar until stiff peaks form.
- Gently stir and melt the gelatin in the microwave until dissolved.
- Combine the gelatin mixture with the pureed strawberries and fold into the whipped cream.
- Chop the remaining strawberries, sprinkle with sugar, and let sit for 10 minutes.
- Layer some chopped strawberries at the bottom of serving glasses, top with mousse mixture, and chill for 4 hours.
- Garnish with remaining strawberries and whipped cream before serving.
Notes
For best results, use fresh strawberries and ensure your bowls are cold while whipping the cream. Consider adding mint or basil for flavor.
