A creamy and fluffy strawberry mousse filling made with white chocolate and freeze-dried strawberry powder, perfect for cakes or as a standalone dessert.
Ingredients
- 1 cup white chocolate chips
- 1 1/3 cups cold heavy cream
- 1/2 cup freeze-dried strawberry powder
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- A pinch of fine salt
Instructions
- Start by melting the white chocolate chips in short bursts in the microwave, stirring until smooth.
- In a separate bowl, whip 1 cup of heavy cream with powdered sugar and vanilla until soft peaks form.
- Gently fold the melted white chocolate into the whipped cream until well combined.
- Add in the freeze-dried strawberry powder and mix until fully incorporated.
- Transfer the filling to an airtight container and refrigerate for at least two hours before using.
Notes
For the best results, ensure your heavy cream is very cold and measure your ingredients accurately. Chill the filling for a couple of hours to enhance texture.
