Description

A light and fluffy strawberry mousse cake filling perfect for elevating any cake.


Ingredients

  • 1 cup white chocolate chips
  • 1 1/3 cups cold heavy cream
  • 1/2 cup freeze-dried strawberry powder
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • A pinch of fine salt


Instructions

  1. Melt the white chocolate chips in short bursts in the microwave until smooth, stirring after each burst.
  2. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  3. Gently fold the melted white chocolate into the whipped cream with a spatula.
  4. Add the freeze-dried strawberry powder and mix until well combined.
  5. Transfer to an airtight container and refrigerate for at least two hours before using.

Notes

For a more stable mousse, use cold mixing tools and chill your mixing bowl and whisk. Adjust the amount of strawberry powder to your taste.
