Description

A delightful pound cake infused with fresh strawberry flavors, reminiscent of summer milkshakes, perfect for sharing with loved ones.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pureed fresh strawberries
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • A few drops of pink food coloring (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a loaf pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and milk.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Gently fold in the pureed strawberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. For the glaze, whisk together the powdered sugar, milk, and food coloring until smooth. Drizzle over the cooled cake.
  10. Serve with fresh strawberries or a scoop of ice cream.
