Ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup pureed fresh strawberries
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- A few drops of pink food coloring (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a loaf pan.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and milk.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
- Gently fold in the pureed strawberries.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, milk, and food coloring until smooth. Drizzle over the cooled cake.
- Serve with fresh strawberries or a scoop of ice cream.
