Ingredients

  • 454 g fresh strawberries, chopped (1 lb.)
  • 200 g digestive or ginger snaps crumbs (2 cups)
  • 60 ml melted butter (1/4 cup)
  • 12 g granulated sugar (optional) (1 tbsp)
  • 2 8 ounce (227 g) blocks of cream cheese, softened
  • 396 g can of sweetened condensed milk (14 oz)
  • 5 ml vanilla essence (1 tsp)
  • Cool Whip or whipped cream for topping (optional)
  • Extra strawberries, chocolate shavings, chopped nuts etc (optional)

Instructions

  1. In a medium-sized bowl, combine the digestive or ginger snap crumbs with the melted butter and optional sugar. Place aside.
  2. In a larger bowl, use a mixer to blend the softened cream cheese until it becomes smooth. Incorporate the sweetened condensed milk and vanilla essence, mixing thoroughly until well combined.
  3. Begin by layering a small portion of the cream cheese mixture, then add half of the crumb mixture, followed by a layer of chopped strawberries.
  4. Continue by adding another layer of the cream cheese mixture, followed by the remaining crumb mixture.
  5. Optionally, finish with a topping of whipped cream or Cool Whip, and garnish with extra fresh strawberries or other desired toppings.
