Description

A delightful and moist strawberry cake made with white cake mix and strawberry gelatin, perfect for summer gatherings and celebrations.


Ingredients

  • 1 (18.25-ounce) box white cake mix
  • 1 (3-ounce) box strawberry-flavored gelatin
  • 1 (10-ounce) package frozen strawberries in syrup, thawed and puréed
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • Strawberry Cream Cheese Frosting
  • Garnish: sliced fresh strawberries


Instructions

  1. Preheat your oven to 350°F. Lightly grease two 9-inch round cake pans.
  2. In a large bowl, combine the white cake mix and strawberry-flavored gelatin, mixing them well.
  3. Add the puréed strawberries, eggs, vegetable oil, and ¼ cup of water to the bowl. Beat at medium speed with a mixer until the mixture is smooth and well combined.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 20 minutes or until a wooden pick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes. Afterward, remove them from the pans and let them cool completely on wire racks.
  7. Once cool, spread the strawberry cream cheese frosting between the layers and on the top and sides of the cake.
  8. Garnish with sliced fresh strawberries if desired.
  9. Store the cake, covered, in the refrigerator for up to 3 days.
