A delightful and moist strawberry cake made with white cake mix and strawberry gelatin, perfect for summer gatherings and celebrations.
Ingredients
- 1 (18.25-ounce) box white cake mix
- 1 (3-ounce) box strawberry-flavored gelatin
- 1 (10-ounce) package frozen strawberries in syrup, thawed and puréed
- 4 large eggs
- 1/2 cup vegetable oil
- 1/4 cup water
- Strawberry Cream Cheese Frosting
- Garnish: sliced fresh strawberries
Instructions
- Preheat your oven to 350°F. Lightly grease two 9-inch round cake pans.
- In a large bowl, combine the white cake mix and strawberry-flavored gelatin, mixing them well.
- Add the puréed strawberries, eggs, vegetable oil, and ¼ cup of water to the bowl. Beat at medium speed with a mixer until the mixture is smooth and well combined.
- Divide the batter evenly between the prepared pans.
- Bake for 20 minutes or until a wooden pick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes. Afterward, remove them from the pans and let them cool completely on wire racks.
- Once cool, spread the strawberry cream cheese frosting between the layers and on the top and sides of the cake.
- Garnish with sliced fresh strawberries if desired.
- Store the cake, covered, in the refrigerator for up to 3 days.
