Description

Delightful strawberry blondies that are easy to make in one bowl, combining sweet-tart strawberries with rich flavors.


Ingredients

  • ½ cup fresh strawberries, chopped small (80g)
  • ½ cup unsalted butter, melted (113g)
  • 1 cup granulated sugar (200g)
  • ¼ teaspoon kosher salt
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cup all-purpose flour (157g)


Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and kosher salt until creamy.
  3. Add the large egg and vanilla extract, whisking until evenly blended.
  4. Gently mix in the all-purpose flour, leaving some large streaks of flour.
  5. Fold in the prepared strawberries until distributed.
  6. Drop the thick batter into the lined baking pan and smooth into an even layer.
  7. Bake for 25 to 30 minutes, checking for doneness with a tester that should come out with a few moist crumbs.
