Description

A delightful blend of sweet strawberries and mashed bananas, this Strawberry Banana Bread is perfect for breakfast or an afternoon snack.


Ingredients

  • 2 cups pancake mix
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 cup mashed bananas
  • 1 cup chopped strawberries
  • 3/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for the glaze)
  • 1 tablespoon milk (for the glaze)
  • 1 tablespoon strawberry puree (for the glaze)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the pancake mix and sugar.
  3. In another bowl, combine the vegetable oil, mashed bananas, milk, egg, and vanilla.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in the chopped strawberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Meanwhile, prepare the glaze by mixing powdered sugar, milk, and strawberry puree until smooth.
  9. Once the bread is cooled, drizzle the glaze on top. Slice and serve.

Notes

Choose ripe bananas for natural sweetness. Fresh strawberries are best, but frozen can be used if thawed and drained.
