Ingredients
- 450g boneless, skinless chicken breasts, cut into bite-sized pieces (1 lb)
- 340g penne pasta (12 oz)
- 1 tablespoon (15 ml) olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 1/2 cups (360 ml) BBQ sauce (smoky or hickory style recommended)
- 1/3 cup (80 ml) honey
- 2 cups (480 ml) chicken broth
- 1 tablespoon (15 ml) soy sauce
- 1/2 teaspoon (3 ml) smoked paprika
- 1/2 teaspoon (3 ml) black pepper
- 1/2 teaspoon (3 ml) salt (adjust to taste)
- 1 tablespoon (15 ml) fresh parsley, chopped (for garnish)
Instructions
- Warm the olive oil in a large frying pan over medium heat. Introduce the chopped chicken pieces and sprinkle with salt, pepper, and smoked paprika. Cook for 4-5 minutes until the chicken is brown on all sides, but not completely cooked through.
- Incorporate the minced garlic and diced onion into the pan. Continue to cook for another 2 minutes until the aroma is released and the onions begin to soften.
- Pour in the BBQ sauce, honey, chicken broth, and soy sauce. Combine all the ingredients thoroughly.
- Add the dry penne pasta directly into the sauce. Stir to ensure the pasta is entirely coated and immersed in the liquid.
- Increase the heat until the mixture reaches a gentle boil. When it starts boiling, lower the heat, cover the pan, and allow it to gently cook for around 15-18 minutes, stirring from time to time to avoid sticking.
- When the pasta is soft and the sauce has become thick, take it off the heat. Stir it once more and let it sit for 2-3 minutes.
- Sprinkle with freshly chopped parsley and serve while hot!
