  • 450g boneless, skinless chicken breasts, cut into bite-sized pieces (1 lb)
  • 340g penne pasta (12 oz)
  • 1 tablespoon (15 ml) olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 1/2 cups (360 ml) BBQ sauce (smoky or hickory style recommended)
  • 1/3 cup (80 ml) honey
  • 2 cups (480 ml) chicken broth
  • 1 tablespoon (15 ml) soy sauce
  • 1/2 teaspoon (3 ml) smoked paprika
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 teaspoon (3 ml) salt (adjust to taste)
  • 1 tablespoon (15 ml) fresh parsley, chopped (for garnish)


Instructions

  1. Warm the olive oil in a large frying pan over medium heat. Introduce the chopped chicken pieces and sprinkle with salt, pepper, and smoked paprika. Cook for 4-5 minutes until the chicken is brown on all sides, but not completely cooked through.
  2. Incorporate the minced garlic and diced onion into the pan. Continue to cook for another 2 minutes until the aroma is released and the onions begin to soften.
  3. Pour in the BBQ sauce, honey, chicken broth, and soy sauce. Combine all the ingredients thoroughly.
  4. Add the dry penne pasta directly into the sauce. Stir to ensure the pasta is entirely coated and immersed in the liquid.
  5. Increase the heat until the mixture reaches a gentle boil. When it starts boiling, lower the heat, cover the pan, and allow it to gently cook for around 15-18 minutes, stirring from time to time to avoid sticking.
  6. When the pasta is soft and the sauce has become thick, take it off the heat. Stir it once more and let it sit for 2-3 minutes.
  7. Sprinkle with freshly chopped parsley and serve while hot!
