Ingredients

  • 8 oz (225g) rice noodles or lo mein noodles
  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp (30ml) cornstarch
  • 2 tbsp (30ml) vegetable oil for cooking
  • 4 garlic cloves, minced
  • 1 tbsp (15ml) ginger, minced
  • 2 green onions, sliced
  • 1 cup (150g) broccoli florets or mixed stir-fry vegetables (optional)
  • For the sauce
  • ¼ cup (60ml) soy sauce
  • 2 tbsp (30ml) hoisin sauce
  • 2 tbsp (30ml) honey or brown sugar
  • 1 tbsp (15ml) rice vinegar
  • 1 tsp (5ml) sesame oil
  • 1/2 tsp (3 ml) red pepper flakes or chili paste
  • ¼ cup (60ml) water


Instructions

  1. Prepare the noodles as per the instructions on the package, then drain and rinse them under cold water before setting aside.
  2. Coat the chicken pieces evenly with cornstarch. Heat oil in a large pan or wok over medium-high heat. Arrange the chicken in a single layer and cook for 5 to 6 minutes, turning them over to ensure even cooking until they are golden and fully cooked. Remove from the pan and set aside.
  3. Using the same pan, add a bit more oil if necessary. Sauté the minced garlic and ginger for about 1 minute until they release their aroma. Add the broccoli or mixed vegetables and cook for 2 to 3 minutes until they are just tender.
  4. Place the chicken back into the pan. In a bowl, mix together the soy sauce, hoisin, honey, vinegar, sesame oil, red pepper flakes, and water. Pour this mixture over the chicken and vegetables, stirring to coat them thoroughly. Let it simmer for 3 to 5 minutes until the sauce thickens and becomes sticky.
  5. Add the noodles that were set aside to the pan and toss everything together until the noodles are well-coated and warmed through.
  6. Before serving, sprinkle with sliced green onions for garnish.
