Ingredients

  • 1 1/2 cups parboiled rice (280g)
  • 2 teaspoons minced garlic (10g)
  • 2 3/4 cups WARM low sodium beef broth (650ml)
  • 1 pinch salt (optional)
  • 3 tablespoons lime juice (45ml)
  • 1/4 cup chopped cilantro (optional) (15g)
  • 1 recipe prepared beef fajitas
  • grilled corn, guacamole, pico de gallo, dairy-free sour cream, grilled veggies, crushed up tortilla chips, salsa, hot sauce, black beans, and anything else you like

Instructions

  1. FOR THE GARLIC LIME RICE: Start by washing the rice thoroughly using a fine mesh strainer under cold water for a couple of minutes, gently rubbing the grains to eliminate excess starch, then set aside. Warm the vegetable oil in a large sauté pan over medium heat. Add the washed rice and let it toast for about 2-3 minutes, stirring often to prevent sticking or burning. Introduce the minced garlic and continue cooking for 30 seconds until you can smell the aroma. Pour in the warm beef broth, a pinch of salt if desired, and lime juice, then bring the mixture to a boil, stirring once to separate any clumps. Cover the pan, lower the heat, and let the rice cook for 12-15 minutes until the liquid is absorbed. Allow it to sit for 5 minutes, then mix in the cilantro and fluff the rice with a fork.
