Ingredients
- – 1 ½ pounds (680 g) beef, red mini creamer or similar mini potatoes
- – 4 cups (946 ml) water
- – 3 tablespoons (45 ml) lemon juice
- – 2 tablespoons (30 ml) vegetable oil
- – 1 teaspoon (5 ml) salt
- – 1 teaspoon (5 ml) onion powder
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) paprika, smoked or regular
- – ½ teaspoon black pepper
- – parsley flakes, fresh or dried
Instructions
- Set your oven to 385°F to preheat.
- Cover a baking tray with parchment paper.
- Rinse the mini potatoes thoroughly and put them aside.
- Combine the cold water with 2 tablespoons of lemon juice in a bowl.
- With a paring knife, gently carve skull designs into each mini potato, then immerse them in the lemon water mixture.
- In a separate bowl, combine the vegetable oil, the remaining tablespoon of lemon juice, and the seasonings.
- Remove the potatoes from the lemon water and coat them in the seasoned oil mixture.
- Arrange the potatoes on the prepared baking tray with the carved side facing up. Bake for around 30 minutes until they become golden and soft.
- Add your preferred toppings and more salt if desired before serving.
