Ingredients

  • – 1 ½ pounds (680 g) beef, red mini creamer or similar mini potatoes
  • – 4 cups (946 ml) water
  • – 3 tablespoons (45 ml) lemon juice
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 teaspoon (5 ml) salt
  • – 1 teaspoon (5 ml) onion powder
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) paprika, smoked or regular
  • – ½ teaspoon black pepper
  • – parsley flakes, fresh or dried


Instructions

  1. Set your oven to 385°F to preheat.
  2. Cover a baking tray with parchment paper.
  3. Rinse the mini potatoes thoroughly and put them aside.
  4. Combine the cold water with 2 tablespoons of lemon juice in a bowl.
  5. With a paring knife, gently carve skull designs into each mini potato, then immerse them in the lemon water mixture.
  6. In a separate bowl, combine the vegetable oil, the remaining tablespoon of lemon juice, and the seasonings.
  7. Remove the potatoes from the lemon water and coat them in the seasoned oil mixture.
  8. Arrange the potatoes on the prepared baking tray with the carved side facing up. Bake for around 30 minutes until they become golden and soft.
  9. Add your preferred toppings and more salt if desired before serving.
