- – Black Decorating Icing Gel

- Set your oven to 225°F to begin warming up.
- Use an electric mixer to beat the egg whites on high until they turn frothy with many tiny bubbles.
- Gradually add the sugar in small increments.
- Incorporate the cream of tartar into the mix.
- Keep beating the mixture until it becomes stiff and holds its shape when the mixing stops.
- Line a baking sheet with foil and spray it with non-stick spray.
- Transfer the meringue mixture into a piping bag.
- With a large round piping tip, press the meringue mixture straight down onto the foil, lifting slightly to form layered stacks for each ghost, easing up on the pressure and pulling up the bag slightly between each layer.
- Let them bake for around 45 minutes or until they have a slight golden hue on top.
- After cooling completely, they will become firm and ready for decoration with the black icing gel.
- Use the gel to give your ghosts eyes and mouths, or create funny expressions.
- Keep them in a container that seals well to maintain freshness.
