- 3/8 tsp (2 ml) red pepper flakes ($0.02)
- 2 tsp (10 ml) Italian seasoning ($0.20)
- 1 tsp (5 ml) salt ($0.03)
- 1 tsp (5 ml) garlic powder ($0.10)
- 1 tsp (5 ml) paprika ($0.10)
- 1/2 tsp (3 ml) freshly cracked black pepper ($0.08)
- 4 boneless, skinless chicken breasts (about 2 lb (907 g) s.) ($10.92)
- 1 1/2 Tbsp (23 ml) olive oil ($0.33)
Instructions
- Set the oven to a temperature of 400°F. In a small bowl, mix together the ingredients for the spinach filling until thoroughly combined, then put it aside.
- In another small bowl, blend the spices needed for seasoning the chicken and keep them ready.
- Lay the chicken breasts on a cutting board. With a sharp, small knife, gently make a cut into the side of each breast, ensuring you don’t slice all the way through.
- Coat both sides of the chicken breasts with olive oil. After that, evenly apply the spice blend to both sides.
- Proceed to fill each chicken breast with the spinach and cheese mixture, distributing it evenly among all four breasts.
- Arrange the stuffed chicken breasts in a large 9×13-inch baking dish. Bake them without covering for 25-30 minutes until the chicken’s internal temperature hits 165°F.
- Once done, take the chicken out of the oven and let it sit for a few minutes to allow the juices to settle within the meat. Serve warm and enjoy!
