Description

Juicy spinach garlic meatballs combine ground meat with fresh spinach and gooey mozzarella for a comforting family dish.


Ingredients

  • 1 lb Ground Beef or Turkey (lean turkey is a good option)
  • 2 cups Fresh Spinach (sautéed)
  • 4 cloves Garlic (minced)
  • 1 small Onion (optional, finely chopped)
  • 1 large Egg
  • 1 cup Breadcrumbs (can use oats or almond flour)
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes (chilled)
  • 1 tbsp Italian Seasoning
  • Salt (to taste)
  • Pepper (to taste)
  • 1/2 tsp Red Pepper Flakes (optional for heat)
  • 1 tbsp Chopped Parsley (for freshness)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat a bit of olive oil in a skillet over medium heat. Sauté the chopped spinach until wilted, about 2-3 minutes. Set aside to cool.
  3. In a bowl, combine the ground meat, sautéed spinach, minced garlic, optional onion, egg, breadcrumbs, grated parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes if using.
  4. Mix everything until well combined, but do not overmix.
  5. Gently fold in the chilled mozzarella cubes, ensuring they’re evenly distributed without breaking apart.
  6. Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  7. Bake for 25-30 minutes or until cooked through and golden brown on the outside.
  8. Remove from the oven and let them cool slightly. Serve with additional chopped parsley for garnish.

Notes

For extra crispy meatballs, broil them for 2-3 minutes after baking. Ensure meatballs stay moist by not overbaking.
