Ingredients
- 1 pound (454 g) chicken thighs – boneless, skinless, or use breast
- 4 tablespoon (60 ml) s cooking oil – divided
- 1 large green bell pepper – seeds removed, cut into bite size pieces
- 1 medium (200 g) onion – cut into bite-size pieces
- 5 tablespoon (23 ml) s ginger – minced or grated
- 4 cloves garlic – minced
- 5 medium jalapenos – sliced into rounds (Note A)
- 1 teaspoon (5 ml) cornstarch
- 2 tablespoon (30 ml) s water
- 1 teaspoon (5 ml) cooking oil
- 1 tablespoon (15 ml) soy sauce – regular or light
- 1 teaspoon (5 ml) ground black pepper
- 1/2 teaspoon (3 ml) garlic powder
- 1 tablespoon (15 ml) cornstarch
- 1/2 cup (120 ml) water – or low-sodium chicken broth
- 5 tablespoon (38 ml) s soy sauce – regular or light
- 5 tablespoon (23 ml) s mushroom sauce
- 2 teaspoon (10 ml) s white vinegar – or rice vinegar
- 1 teaspoon (5 ml) ground black pepper
- 1 teaspoon (5 ml) sesame oil
- 1 teaspoon (5 ml) sugar
Instructions
- Slice the chicken into small, bite-sized portions, either as cubes or thin slices, based on your preference.
- Combine all the elements listed under “chicken marinade” in a bowl, stir thoroughly, then incorporate the chicken pieces. Ensure the chicken is well-coated with the marinade and let it rest for 10 minutes.
- In a separate bowl, blend together all the components listed under “sauce” until well mixed. Set this aside for later use.
- Warm 3 tablespoons of cooking oil in a large, non-stick or well-seasoned skillet or wok over medium-high heat. Place the chicken into the pan in a single layer without overcrowding; cook in batches if necessary.
- Stir the chicken continuously for 4 to 6 minutes until it is fully cooked, depending on how thick the pieces are. Transfer the chicken to a plate and keep it aside.
- Using the same skillet or wok, add the remaining 1 tablespoon of cooking oil, then toss in the bell pepper, onion, ginger, and garlic. Cook for 2 minutes, stirring often, before adding the jalapenos and stirring for another 2 minutes.
- Return the cooked chicken and any accumulated juices to the skillet or wok. Give the sauce you set aside another stir, then pour it over the chicken and vegetables.
- Continue to stir and cook for 2 to 4 minutes until the sauce has thickened to your liking.
- Switch off the heat and serve your dish alongside some rice. Enjoy your meal!
