Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 1 small onion, finely chopped
  • 1 lb (454 g). ground beef
  • 2 tablespoon (30 ml) s low sodium Taco seasoning
  • 8 ounce (227 g) s cheddar cheese, cut into large chunks
  • 1 (10 ounce (283 g)) can diced tomatoes with green chiles
  • 8 to 10 crunchy taco shells
  • Shredded iceberg lettuce
  • Optional : desired toppings such as diced tomato, hot sauce, and sour cream


Instructions

  1. Warm the olive oil in a large pan over medium-high heat.
  2. Add the chopped onion and sauté for 1 minute, stirring continuously.
  3. Incorporate the ground beef, breaking it apart with a wooden spoon, and cook until it is fully browned, about 5 to 10 minutes.
  4. Stir in the taco seasoning and cook for another minute.
  5. Add the cheddar cheese and the diced tomatoes with green chiles, then lower the heat to medium-low.
  6. Stir the mixture constantly until the cheese melts and the mixture starts to simmer.
  7. Continue to cook for an additional 3 minutes, then take the pan off the heat.
  8. Stuff the mixture into the taco shells and sprinkle with shredded lettuce and any other toppings you desire.
  9. Serve and enjoy your meal.
