Description

A comforting and nutritious soup made with lentils and carrots, seasoned with aromatic spices.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, chopped
  • 1 cup lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh herbs for garnish (cilantro or parsley)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic; sauté until onion turns translucent (3-4 minutes).
  3. Add the chopped carrots and sauté for 5 minutes.
  4. Incorporate the lentils, vegetable broth, cumin, and coriander. Bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Blend with an immersion blender for a creamy texture or leave chunky.
  7. Taste and adjust seasoning with salt and pepper before serving.
  8. Garnish with fresh herbs and serve alongside crusty bread.

Notes

Feel free to add a pinch of cayenne for heat or smoked paprika for extra flavor. A squeeze of lemon juice just before serving brightens the soup.
