Description
A comforting and nutritious soup made with lentils and carrots, seasoned with aromatic spices.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 large carrots, chopped
- 1 cup lentils, rinsed
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh herbs for garnish (cilantro or parsley)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic; sauté until onion turns translucent (3-4 minutes).
- Add the chopped carrots and sauté for 5 minutes.
- Incorporate the lentils, vegetable broth, cumin, and coriander. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Blend with an immersion blender for a creamy texture or leave chunky.
- Taste and adjust seasoning with salt and pepper before serving.
- Garnish with fresh herbs and serve alongside crusty bread.
Notes
Feel free to add a pinch of cayenne for heat or smoked paprika for extra flavor. A squeeze of lemon juice just before serving brightens the soup.
