Ingredients

  • – 1 teaspoon (5 ml) vegetable oil
  • – 1 cup (240 ml) onion, chopped small
  • – 2 garlic cloves, minced
  • – 1 can (15-ounce or 425 g) black beans, drained and rinsed (1 1/2 cups)
  • – 1 teaspoon (5 ml) cumin
  • – 1 teaspoon (5 ml) ancho chili powder
  • – 1/2 teaspoon (3 ml) oregano
  • – 1/2 teaspoon (3 ml) coriander
  • – 1/2 teaspoon (3 ml) paprika
  • – 1 Tablespoon (15 ml) lime juice
  • – 1/4 cup (60 ml) water
  • – Salt to taste
  • – 6 corn taco shells
  • – 1 large tomato, chopped small
  • – 1 cup (30 g) romaine lettuce or baby spinach, chopped
  • – 1 batch guacamole or 2 sliced avocados


Instructions

  1. ▢ Heat your oven to 350 degrees. (You can skip this if you’re using an air fryer to heat the taco shells.)
  2. ▢ Pour oil into a pan and heat it over medium. Reserve 2 Tablespoons of the chopped onions for later. Add the rest of the onions and garlic to the pan. Cook until they release their aroma and become see-through, roughly 3 minutes.
  3. ▢ Introduce the drained black beans, cumin, ancho chili powder, oregano, coriander, paprika, lime juice, and water into the pan. Stir the mixture well to ensure the beans and spices are thoroughly combined.
  4. ▢ Allow the black bean mixture to heat through and evaporate any remaining liquid, then season with salt as needed.
  5. ▢ Place the corn shells in the oven to warm for 5 minutes. Alternatively, use an air fryer by placing the shells inside one another in the basket and heating at 370 degrees for 3 to 4 minutes. Exercise caution when removing them, as they will be hot.
  6. ▢ Fill each corn shell with a generous scoop of the spicy black bean mix, then add chopped tomato, romaine lettuce, onion, and either guacamole or sliced avocado.

Notes

  • Enhance flavors by adding smoked paprika or chipotle powder to the black bean mixture.
  • Add heat with chopped jalapenos or a drizzle of hot sauce on top.
  • Create creaminess by drizzling vegan sour cream or sprinkling dairy-free cheese over the taco filling.
