Delicious pancakes inspired by the flavors of Spanish churros, perfect for a cozy breakfast gathering.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cinnamon sugar for topping
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are okay.
- Allow the batter to rest for a few minutes.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Sprinkle with cinnamon sugar immediately after removing from the skillet.
- Serve warm and enjoy!
Notes
For best results, avoid overmixing the batter and use fresh baking powder.
