Ingredients

  • 1 lb (454 g) spaghetti noodles
  • 1/4 cup (60 ml) olive oil
  • 6 large cloves garlic, peeled and thinly sliced
  • 10 oz (283 g). baby spinach (10 loosely packed cups)
  • Kosher salt and freshly ground black pepper to taste
  • 1 cup (240 ml) freshly grated Parmigiano Reggiano cheese (about 2 oz (57 g).)


Instructions

  1. Boil the spaghetti in salted water until it reaches an almost tender texture. Strain it, keeping aside 1 cup of the water for later use.
  2. In the meantime, heat the olive oil and garlic in a large pan over medium-low heat. Stir frequently until the garlic is aromatic and starts to turn light brown, for about 4 to 6 minutes. Introduce the spinach, adding salt and pepper, and gently toss with tongs as it begins to wilt, which should take about 2 to 3 minutes.
  3. Incorporate the drained spaghetti and half of the saved cooking water. Stir and toss for 1 to 2 minutes to merge the flavors. If the pasta isn’t soft enough or seems dry, add the remaining cooking water and continue to stir and cook until fully done. Adjust the seasoning with more salt and pepper if necessary. Finally, top with freshly grated cheese.

  • For a healthier option, try using whole wheat spaghetti noodles.
  • Enhance the dish with cherry tomatoes or sliced mushrooms.
  • Be generous with the Parmigiano Reggiano cheese for a flavorful touch.
