Ingredients
- 1 spaghetti squash (1 kg)
- 2 tablespoons vegetable oil (30 ml)
- 1 onion, chopped
- 1 large clove garlic, minced
- 1 large zucchini, cut into bite-size pieces (200 g)
- 1 green bell pepper, chopped
- 1 tablespoon (15 ml) dried Italian herb seasoning
- fresh ground black pepper, to taste
- 5 cups chopped tomato (360 ml)
- 75 cup (180 ml) crumbled white cheese
Instructions
- Using a fork, puncture the skin of the spaghetti squash and place it in a dish suitable for the microwave; heat on high for 12 minutes. Allow it to cool until it can be handled comfortably.
- Cut the squash in half along its length; remove the seeds. With a fork, scrape the flesh from the shell and transfer it into a big bowl, using the fork to loosen the strands as much as possible.
- Warm vegetable oil in a large pan over medium heat. Sauté the onion in the heated oil until it becomes soft, approximately 3 minutes. Add minced garlic; continue to sauté for an additional 3 minutes. Incorporate zucchini and chopped green bell pepper into the mix; flavor with Italian herb seasoning and freshly ground black pepper.
- Add the chopped tomatoes to the pan. Keep cooking until the tomatoes are just heated through, around 3 to 5 minutes. Introduce the spaghetti squash strands to the pan and mix until well-combined. Sprinkle with crumbled white cheese and mix once more before serving.
