Ingredients
- 454 g spaghetti (1 lb)
- 30 ml (2 tbsp) vegetable oil, divided, or as needed
- 8 slices beef bacon, diced
- 1 onion, chopped
- 1 clove garlic, minced
- 60 ml (1/4 cup) apple juice
- 4 large eggs, beaten
- 120 g (1/2 cup) grated Parmesan cheese
- salt and black pepper to taste
- 30 ml (2 tbsp) chopped fresh parsley
- 30 g (2 tbsp) grated Parmesan cheese
Instructions
- Fill a big pot with water and a pinch of salt; bring it to a boil. Add the spaghetti, stirring now and then, and let it cook until it’s al dente, approximately 12 minutes. Drain the pasta, mix it with 1 tablespoon of vegetable oil, and set it aside.
- In a large frying pan over medium heat, place the diced beef bacon. Stir and cook until the pieces are uniformly browned, which should take about 10 minutes. Drain the bacon on paper towels, but keep 2 tablespoons of the fat in the pan.
- Add 1 tablespoon of vegetable oil to the reserved bacon fat in the pan. Toss in the chopped onion and sauté over medium heat until the onion turns transparent. Add the minced garlic and cook until it becomes aromatic, about 1 minute. Pour in the apple juice and let it simmer for another minute.
- Return the cooked bacon to the pan and add the prepared spaghetti. Mix everything to coat the spaghetti evenly, heating it through while adding more oil if necessary to prevent sticking. Pour in the beaten eggs and continue to mix constantly with tongs or a large fork until the eggs are just set. Quickly incorporate 1/2 cup of grated Parmesan cheese, stirring to combine. Season with salt and black pepper, keeping in mind the bacon and Parmesan are already salty.
- Serve the dish warm, garnished with chopped parsley on top, and offer extra grated Parmesan cheese at the table.
