Description

A hearty and flavorful dish combining ground beef and sweet potatoes, seasoned with chili powder and cumin for a comforting meal.


Ingredients

  • 1 pound ground beef
  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. Add ground beef to the skillet, breaking it up with a spoon, and cook until browned.
  5. Mix in sweet potatoes, bell pepper, chili powder, cumin, salt, and pepper.
  6. Cook for about 10-15 minutes, stirring occasionally, until sweet potatoes are tender.
  7. Stir in black beans and corn, and heat through for another 5 minutes.
  8. Serve hot.
