Description

A delicious Southern tomato pie featuring ripe heirloom tomatoes, creamy mayonnaise, and a medley of cheeses, all encased in a flaky crust.


Ingredients

  • 1 1/4 cups all-purpose flour or almond flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup olive oil
  • 1 egg
  • 1/2 tsp salt
  • 10 oz ripe heirloom tomatoes, sliced
  • 1/2 cup avocado-oil mayonnaise
  • 1 cup grated sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil
  • 2 tbsp chopped green onions


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine flour, cold butter cubes, olive oil, the egg, and salt in a bowl. Mix until crumbly.
  3. Press the dough into a 9-inch pie dish evenly.
  4. Arrange the tomato slices over the crust, gently pressing them into place.
  5. Whisk the mayonnaise together with the chopped basil and green onions in a small bowl.
  6. Spread this mixture evenly over the tomatoes.
  7. Sprinkle the grated sharp cheddar cheese and shredded mozzarella cheese evenly on top.
  8. Bake for 30-35 minutes or until the crust is golden and the cheese bubbles.
  9. Let the pie cool slightly before slicing to serve.

Notes

Consider par-baking the crust for a few minutes before adding the filling to maintain crispness. Experiment with fresh herbs in the mayonnaise mixture for added flavor.
