A delicious Southern tomato pie featuring ripe heirloom tomatoes, creamy mayonnaise, and a medley of cheeses, all encased in a flaky crust.
Ingredients
- 1 1/4 cups all-purpose flour or almond flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup olive oil
- 1 egg
- 1/2 tsp salt
- 10 oz ripe heirloom tomatoes, sliced
- 1/2 cup avocado-oil mayonnaise
- 1 cup grated sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil
- 2 tbsp chopped green onions
Instructions
- Preheat your oven to 375°F (190°C).
- Combine flour, cold butter cubes, olive oil, the egg, and salt in a bowl. Mix until crumbly.
- Press the dough into a 9-inch pie dish evenly.
- Arrange the tomato slices over the crust, gently pressing them into place.
- Whisk the mayonnaise together with the chopped basil and green onions in a small bowl.
- Spread this mixture evenly over the tomatoes.
- Sprinkle the grated sharp cheddar cheese and shredded mozzarella cheese evenly on top.
- Bake for 30-35 minutes or until the crust is golden and the cheese bubbles.
- Let the pie cool slightly before slicing to serve.
Notes
Consider par-baking the crust for a few minutes before adding the filling to maintain crispness. Experiment with fresh herbs in the mayonnaise mixture for added flavor.
