  • 60g white sugar

  • 25ml ground cinnamon
  • 625ml ground nutmeg
  • 5ml fresh lemon juice
  • 10ml cornstarch
  • 120g all-purpose flour
  • 60g white sugar
  • 60g brown sugar
  • 5ml baking powder
  • 5ml salt
  • 85g unsalted butter, chilled and cut into small pieces
  • 60ml boiling water
  • 45g white sugar
  • 5ml ground cinnamon


Instructions

  1. Collect all necessary items.
  2. Set your oven to 425 degrees F (220 degrees C) to preheat.
  3. In a sizable bowl, mix the peach slices with 60g white sugar, 60g brown sugar, ground cinnamon, nutmeg, lemon juice, and cornstarch. Ensure everything is evenly coated, then transfer to a 2-quart baking dish. Place in the hot oven for a 10-minute bake.
  4. While the peaches are baking, in a different large bowl, blend together the flour, 60g white sugar, 60g brown sugar, baking powder, and salt. Use your fingers or a pastry cutter to incorporate the chilled butter until the mixture has a crumbly texture. Gently mix in the boiling water until just combined.
  5. After removing the peaches from the oven, place spoonfuls of the prepared topping evenly over them.
  6. In a small bowl, combine 45g white sugar and ground cinnamon, then sprinkle this mixture over the entire cobbler.
  7. Continue baking in the preheated oven until the topping turns golden, which should take around 30 minutes.
