A rich and creamy Southern bacon gravy that perfectly complements warm, flaky biscuits, evoking feelings of home and nostalgia.
Ingredients
- 1 Pound Bacon
- 1/4 Cup Reserved Grease
- 1/4 Cup Flour
- 1 Cup Heavy Cream
- 1 1/2 Cups Whole Milk
- 1/4 Teaspoon Freshly Cracked Black Pepper
- 1/4 Teaspoon Salt
- 1/8 Teaspoon White Pepper
Instructions
- In a large skillet over medium heat, fry the bacon until crispy.
- Remove the bacon and place it on a paper towel to drain.
- Once cooled, crumble the bacon into small pieces.
- Reserve 1/4 cup of the bacon grease from the skillet.
- Reduce the heat to low and add the flour to the reserved grease.
- Whisk continuously to combine the grease and flour, cooking for about 2-3 minutes until golden and smooth.
- Slowly whisk in the whole milk and heavy cream, ensuring no lumps remain.
- Continue whisking for about 5 minutes as the gravy thickens.
- Stir in the salt, freshly cracked black pepper, and white pepper.
- When it reaches your desired thickness, remove it from heat.
- Stir in the crumbled bacon.
- Taste and add a pinch more salt and pepper, if necessary.
- Spoon the gravy over freshly baked warm biscuits, and enjoy!
Notes
For an extra punch of flavor, consider adding a dash of hot sauce while stirring in the seasonings. Store leftover gravy in an airtight container for up to three days.
