Description

A rich and creamy Southern bacon gravy that perfectly complements warm, flaky biscuits, evoking feelings of home and nostalgia.


Ingredients

  • 1 Pound Bacon
  • 1/4 Cup Reserved Grease
  • 1/4 Cup Flour
  • 1 Cup Heavy Cream
  • 1 1/2 Cups Whole Milk
  • 1/4 Teaspoon Freshly Cracked Black Pepper
  • 1/4 Teaspoon Salt
  • 1/8 Teaspoon White Pepper


Instructions

  1. In a large skillet over medium heat, fry the bacon until crispy.
  2. Remove the bacon and place it on a paper towel to drain.
  3. Once cooled, crumble the bacon into small pieces.
  4. Reserve 1/4 cup of the bacon grease from the skillet.
  5. Reduce the heat to low and add the flour to the reserved grease.
  6. Whisk continuously to combine the grease and flour, cooking for about 2-3 minutes until golden and smooth.
  7. Slowly whisk in the whole milk and heavy cream, ensuring no lumps remain.
  8. Continue whisking for about 5 minutes as the gravy thickens.
  9. Stir in the salt, freshly cracked black pepper, and white pepper.
  10. When it reaches your desired thickness, remove it from heat.
  11. Stir in the crumbled bacon.
  12. Taste and add a pinch more salt and pepper, if necessary.
  13. Spoon the gravy over freshly baked warm biscuits, and enjoy!

Notes

For an extra punch of flavor, consider adding a dash of hot sauce while stirring in the seasonings. Store leftover gravy in an airtight container for up to three days.
