Ingredients
- – 3 lb (1.5 kg) tomatoes, halved, cut a “V” out of the top to remove the core
- – 5 garlic cloves, NOT peeled
- – 2 tbsp (30 ml) olive oil
- – 1 1/2 tsp (8 ml) smoked paprika, optional
- – 1 tsp (5 ml) cooking salt / kosher salt
- – 1/4 tsp (1 ml) black pepper
- – 1 tbsp (15 ml) olive oil
- – 2 garlic cloves, finely minced
- – 1 onion, diced
- – 1 liter (4 cups (960 ml)) vegetable stock/broth, low sodium (try homemade!)
- – 1/2 tsp (3 ml) + white sugar, only if needed
- – 1/2 cup cream, optional, plus extra for drizzling (substitute 30g/2 tbsp vegetable oil)
- – 1/4 cup (60 ml) roughly chopped fresh basil leaves, NOT CRITICAL
Instructions
- Heat the oven to 220°C/425°F (200°C for fan ovens).
- Mix and coat – On a baking sheet, place the tomato halves and garlic cloves with their skins on. Drizzle with olive oil, sprinkle smoked paprika, salt, and pepper over them. Mix to coat, pressing the cut side of the tomatoes into the oil on the tray for complete coverage. Position tomatoes with the cut side facing up.
- Bake for 40 to 45 minutes until the tomatoes start to char slightly.
- Cook – In a large pot, warm the olive oil over medium-high heat. Cook the minced garlic and chopped onion for about 3 minutes until the onion becomes see-through.
- Tomatoes – Take the garlic cloves from the baking sheet. Transfer all tomatoes and their juices into the pot. Squeeze the garlic out of its skin into the pot. Pour in the vegetable broth.
- Blend with an immersion blender until the mixture is smooth (alternatively, use a countertop blender or food processor).
- Simmer – Allow the mixture to come to a gentle boil, then reduce heat to medium and let it simmer for 10 minutes. Mix in the cream.
- Serve in bowls, drizzle with additional cream, and top with fresh basil. Pair with grilled cheese for a delightful experience!
