Ingredients

  • – 1 tablespoon (15 ml) vegetable oil
  • – 2 tablespoons (30 ml) olive oil
  • – 1 yellow onion, finely diced
  • – 3 cloves garlic, finely chopped
  • – 1 package (400 g) beef sausage, (such as beef kielbasa or beef andouille), sliced into 1/4-inch rounds
  • – 4 cups (960 ml) torn kale leaves
  • – salt and fresh ground black pepper, to taste
  • – 1 sprig fresh rosemary
  • – 1/2 teaspoon (3 ml) dried thyme
  • – 3 cups (720 ml) cubed potatoes
  • – 4 cups (960 ml) low-sodium fat-free chicken broth
  • – 2 cups (480 ml) plant-based milk, I used Soy milk, see notes below for more options


Instructions

  1. Warm vegetable oil and olive oil in a large pot over medium-high heat.
  2. Add the chopped onion, minced garlic, sliced beef sausage, kale, salt, pepper, sprig of rosemary, and thyme; mix everything together and let it cook for about 8 minutes, stirring every now and then.
  3. Incorporate the diced potatoes and let them cook for an additional minute.
  4. Pour in the chicken broth and soy milk; bring the mixture to a boil.
  5. Lower the heat to a simmer and let it continue cooking for 10 to 14 minutes or until the potatoes are soft and fully cooked.
  6. Take the pot off the heat.
  7. Check the seasoning and adjust the salt and pepper if needed.
  8. Discard the rosemary sprig.
  9. Serve the soup by ladling it into bowls.

Notes

  • For a lighter option, use plant-based milk like almond or oat milk instead of soy milk.
  • Feel free to include other vegetables such as carrots or celery for added flavor and nutrients.
  • To add some spice, consider sprinkling red pepper flakes or a dash of hot sauce.
