Description

A hearty and flavorful slow cooker taco casserole made with ground beef, beans, corn, and cheese, all layered with crispy tortilla chips.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (16 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 3 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream and green onions for topping (optional)


Instructions

  1. In a skillet, brown the ground beef with the onion and garlic until fully cooked. Drain excess fat.
  2. In the slow cooker, combine the beef mixture, black beans, corn, diced tomatoes, and taco seasoning. Stir well to combine.
  3. Layer half of the crushed tortilla chips on top of the mixture, followed by half of the cheese.
  4. Repeat the layers with the remaining tortilla chips and cheese.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until heated through and cheese is melted.
  6. Serve with sour cream and green onions if desired.

Notes

For extra crunch, sprinkle additional crushed tortilla chips on top during the last few minutes of cooking.
