Description
A hearty and flavorful slow cooker taco casserole made with ground beef, beans, corn, and cheese, all layered with crispy tortilla chips.
Ingredients
- 1 lb ground beef (or turkey)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (16 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 3 cups tortilla chips, crushed
- 2 cups shredded cheese (cheddar or Mexican blend)
- Sour cream and green onions for topping (optional)
Instructions
- In a skillet, brown the ground beef with the onion and garlic until fully cooked. Drain excess fat.
- In the slow cooker, combine the beef mixture, black beans, corn, diced tomatoes, and taco seasoning. Stir well to combine.
- Layer half of the crushed tortilla chips on top of the mixture, followed by half of the cheese.
- Repeat the layers with the remaining tortilla chips and cheese.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until heated through and cheese is melted.
- Serve with sour cream and green onions if desired.
Notes
For extra crunch, sprinkle additional crushed tortilla chips on top during the last few minutes of cooking.
