A comforting and flavorful slow cooker ground beef stew that brings warmth on chilly evenings.
Ingredients
- 1 lb ground beef
- 4 medium potatoes, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Begin by browning the ground beef in a skillet over medium heat. Once browned, drain any excess fat.
- Transfer the ground beef into the slow cooker.
- Add the diced potatoes, sliced carrots, chopped celery, diced onion, and minced garlic to the slow cooker.
- Pour in the beef broth and stir to combine.
- Sprinkle in the thyme, oregano, salt, and pepper, mixing everything thoroughly.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
Notes
For a thicker stew, mix a slurry of cornstarch and water to add towards the end of cooking. Refrigerate overnight for robust flavors.
