Description

A comforting and flavorful slow cooker ground beef stew that brings warmth on chilly evenings.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Begin by browning the ground beef in a skillet over medium heat. Once browned, drain any excess fat.
  2. Transfer the ground beef into the slow cooker.
  3. Add the diced potatoes, sliced carrots, chopped celery, diced onion, and minced garlic to the slow cooker.
  4. Pour in the beef broth and stir to combine.
  5. Sprinkle in the thyme, oregano, salt, and pepper, mixing everything thoroughly.
  6. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the vegetables are tender.

Notes

For a thicker stew, mix a slurry of cornstarch and water to add towards the end of cooking. Refrigerate overnight for robust flavors.
