Ingredients
- 2 pounds ground beef
- 4 large potatoes, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 packet taco seasoning
- 1 onion, chopped
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, brown the ground beef and onion until the meat is no longer pink; drain excess fat.
- In a slow cooker, combine the beef, diced potatoes, beans, crushed tomatoes, and taco seasoning.
- Stir well to combine all ingredients, ensuring the potatoes are covered with sauce.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- If desired, sprinkle cheese on top during the last 30 minutes of cooking.
