Description

A warm and comforting dish of tender beef tips simmered in rich gravy, perfect for family dinners.

Ingredients

  • 2 pounds beef stew meat or chuck roast (cut into chunks)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 ½ cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch
  • 3 tablespoons water (to mix with cornstarch)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Sear the beef chunks on all sides for 2–3 minutes until browned. This step is optional but adds deep flavor.
  3. Transfer the beef to the slow cooker.
  4. Add diced onion and minced garlic over the beef in the slow cooker.
  5. Pour in the beef broth, Worcestershire sauce, soy sauce (if using), thyme, and parsley.
  6. Stir gently to combine all ingredients.
  7. Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is tender and easily pulls apart.
  8. In a small bowl, mix the cornstarch and water to create a slurry.
  9. Pour it into the slow cooker and stir well.
  10. Cover and cook for an additional 20–30 minutes until the gravy thickens.
  11. Serve the beef tips and gravy over mashed potatoes, egg noodles, or rice. Spoon extra gravy on top.

Notes

Let the beef sit at room temperature for 30 minutes before cooking for even cooking. Consider adding root vegetables for added flavor and texture.
