Description

A comforting and rich dish of slow-cooked beef and savory ramen, perfect for weeknights or special occasions.

Ingredients

  • 1 pound beef (such as chuck or brisket), cut into chunks
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons miso paste
  • 1 package ramen noodles
  • Soft-boiled eggs (for topping)
  • Fresh greens (like spinach or bok choy, for topping)
  • Crunchy vegetables (like carrots or bell peppers, for topping)
  • Green onions, sliced (for garnish)

Instructions

  1. Combine the beef chunks, beef broth, soy sauce, ginger, garlic, and miso paste in a slow cooker.
  2. Cover and cook on low for 6-8 hours or until the beef is tender.
  3. Add the ramen noodles to the slow cooker about 30 minutes before serving.
  4. Serve in bowls and top with soft-boiled eggs, fresh greens, crunchy vegetables, and green onions.

Notes

For enhanced flavor, sauté garlic and ginger before adding to the slow cooker. Customize vegetables based on preference.
