A hearty comfort food dish featuring tender beef roast in a savory sauce, perfect for family gatherings.
Ingredients
- 2 pounds beef roast (chuck or round)
- 1 medium onion, sliced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 6 slices of bread (white or Texas toast)
- 4 cups mashed potatoes
Instructions
- Slice the onion and set it aside.
- Heat a pan over medium-high heat and sear the beef roast on all sides until browned.
- Transfer the beef roast to the slow cooker and layer the sliced onions on top.
- In a bowl, mix together beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, dried thyme, black pepper, and salt. Pour this mixture over the beef and onions.
- Cover the slow cooker and cook on low for 480 minutes or on high for 240 minutes.
- Once cooking is complete, remove the beef roast and let it rest for about 10 minutes before slicing.
- In a small bowl, mix cornstarch with cold water to create a slurry. Stir this into the remaining cooking liquid in the slow cooker to thicken.
- Serve the sliced beef on a slice of bread, topped with the thickened gravy, alongside creamy mashed potatoes.
Notes
For a lighter version, substitute vegetable broth for beef broth. You can also add minced garlic for extra flavor.
