Description

A hearty comfort food dish featuring tender beef roast in a savory sauce, perfect for family gatherings.


Ingredients

  • 2 pounds beef roast (chuck or round)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 6 slices of bread (white or Texas toast)
  • 4 cups mashed potatoes


Instructions

  1. Slice the onion and set it aside.
  2. Heat a pan over medium-high heat and sear the beef roast on all sides until browned.
  3. Transfer the beef roast to the slow cooker and layer the sliced onions on top.
  4. In a bowl, mix together beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, dried thyme, black pepper, and salt. Pour this mixture over the beef and onions.
  5. Cover the slow cooker and cook on low for 480 minutes or on high for 240 minutes.
  6. Once cooking is complete, remove the beef roast and let it rest for about 10 minutes before slicing.
  7. In a small bowl, mix cornstarch with cold water to create a slurry. Stir this into the remaining cooking liquid in the slow cooker to thicken.
  8. Serve the sliced beef on a slice of bread, topped with the thickened gravy, alongside creamy mashed potatoes.

Notes

For a lighter version, substitute vegetable broth for beef broth. You can also add minced garlic for extra flavor.
