Ingredients

  • – 680g (1 1/2 lb) potatoes, red mini creamer or similar mini potatoes
  • – 946ml (4 cups) water
  • – 45ml (3 tbsp) lemon juice
  • – 30ml (2 tbsp) olive oil
  • – 5ml (1 tsp) salt
  • – 5ml (1 tsp) onion powder
  • – 5ml (1 tsp) garlic powder
  • – 5ml (1 tsp) paprika, smoked or regular
  • – 2.5ml (1/2 tsp) black pepper
  • – parsley flakes, fresh or dried


Instructions

  1. Set your oven to 385°F.
  2. Cover a baking tray with a sheet of parchment paper.
  3. Rinse the potatoes and put them aside.
  4. Combine the cold water with 2 tablespoons of lemon juice in a bowl.
  5. With a paring knife, carefully sculpt skull shapes into each mini potato. Submerge the carved potatoes in the lemon water.
  6. In a separate bowl, blend the oil, the remaining tablespoon of lemon juice, and the spices.
  7. Remove the potatoes from the water, then coat them with the seasoned oil mixture.
  8. Arrange the potatoes on the prepared baking tray, carved side facing up. Cook in the oven for about 30 minutes or until they are golden and soft.
  9. Add your preferred garnishes and more salt if desired.

  • For a more pronounced citrus taste, increase the lemon juice in the seasoned oil mixture.
  • Experiment with herbs like rosemary or thyme to enhance the flavors.
