Description

A mouthwatering cowboy butter steak with a rich blend of butter, garlic, and herbs that enhances the natural flavor of the meat.


Ingredients

  • 1 stick of butter, mostly melted
  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of additional red pepper flakes or cayenne powder
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for the cast iron preparation


Instructions

  1. Let the steak reach room temperature and pat it dry.
  2. Season generously with salt, pepper, and garlic.
  3. Heat a cast iron skillet over high heat until it’s smoking hot.
  4. Add a splash of avocado oil to the skillet and place your steak inside.
  5. Flip the steak once it develops a crust, and add the melted butter, minced garlic, and fresh herbs.
  6. Spoon the herbed butter over the steak continuously as it cooks.
  7. Use a meat thermometer to check for 130°F for medium-rare.
  8. Let the steak rest for at least 5 minutes before slicing against the grain.
  9. Top with a dollop of cowboy butter and serve.

Notes

For best results, allow the steak to rest after cooking to keep it juicy. Experiment with different herbs in the cowboy butter.
