Description
Deliciously seared steak topped with a rich cowboy butter full of garlic, lemon, and herbs.
Ingredients
- 1 stick of butter, mostly melted
- 4 cloves of garlic, minced
- 1/2 lemon for zest and 1 tablespoon of juice
- 1 tablespoon of Dijon mustard
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne or red pepper flakes
- 1/2 teaspoon of dried thyme
- 1 teaspoon of red pepper flakes or cayenne powder
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for the cast iron preparation
Instructions
- Let the steak come to room temperature for about 30 minutes.
- Pat it dry and rub with salt, pepper, and minced garlic.
- Heat a cast iron skillet over high heat until smoking hot.
- Add a splash of avocado oil to the skillet and place steak inside.
- Flip the steak and introduce the melted butter, minced garlic, and herbs.
- Spoon the melted butter over the steak for about 2-3 minutes, targeting medium-rare doneness.
- Let the steak rest for at least 5 minutes.
- Whisk together softened butter with parsley, green onions, Dijon mustard, lemon juice, lemon zest, and spices until creamy.
- Slice the steak against the grain and dollop cowboy butter on top.

Letting the steak rest after cooking is crucial for tender texture and flavor.
