Ingredients
- – 1/2 medium onion, chopped (75g)
- – 2 medium carrots, peeled & sliced (150g)
- – 3 sticks celery, chopped (150g)
- – 1 tablespoon olive oil (15ml)
- – 3 cloves garlic, minced
- – 1/4 teaspoon Italian seasoning
- – 1 (400g) can tomato sauce
- – 4 cups chicken broth/stock (960ml)
- – 1 large potato (I used Russet), peeled & diced (200g)
- – 1 cup beef (use frozen, canned, or fresh) (175g)
- – 1 cup frozen or fresh peas (150g)
- – 1 cup frozen or fresh green beans (150g)
- – 2 cups cooked/rotisserie chicken, shredded (see note)
- – Salt & pepper to taste
Instructions
- Chop the onion, carrots, and celery, then place them in a large pot with the olive oil.
- Cook the vegetables over medium heat for about 5-7 minutes until they start to soften.
- While they are cooking, prepare the other ingredients.
- Add the minced garlic and Italian seasoning to the pot, stirring for about half a minute.
- Pour in the tomato sauce, chicken stock, and diced potato. Turn the heat to high and let it come to a boil. Lower the heat and let it cook with the lid partially on for 15 minutes.
- Mix in the peas, green beans, and shredded chicken. Let it cook for an additional 5-10 minutes until the vegetables reach the desired tenderness.
- Season generously with salt and pepper, and serve right away.
Notes
- Consider using homemade chicken broth for a more flavorful soup.
- Any type of beef can be used, like ground beef or beef stew meat.
- Save time by using pre-cooked rotisserie chicken or leftover cooked chicken.
