Ingredients

  • – 1/2 medium onion, chopped (75g)
  • – 2 medium carrots, peeled & sliced (150g)
  • – 3 sticks celery, chopped (150g)
  • – 1 tablespoon olive oil (15ml)
  • – 3 cloves garlic, minced
  • – 1/4 teaspoon Italian seasoning
  • – 1 (400g) can tomato sauce
  • – 4 cups chicken broth/stock (960ml)
  • – 1 large potato (I used Russet), peeled & diced (200g)
  • – 1 cup beef (use frozen, canned, or fresh) (175g)
  • – 1 cup frozen or fresh peas (150g)
  • – 1 cup frozen or fresh green beans (150g)
  • – 2 cups cooked/rotisserie chicken, shredded (see note)
  • – Salt & pepper to taste


Instructions

  1. Chop the onion, carrots, and celery, then place them in a large pot with the olive oil.
  2. Cook the vegetables over medium heat for about 5-7 minutes until they start to soften.
  3. While they are cooking, prepare the other ingredients.
  4. Add the minced garlic and Italian seasoning to the pot, stirring for about half a minute.
  5. Pour in the tomato sauce, chicken stock, and diced potato. Turn the heat to high and let it come to a boil. Lower the heat and let it cook with the lid partially on for 15 minutes.
  6. Mix in the peas, green beans, and shredded chicken. Let it cook for an additional 5-10 minutes until the vegetables reach the desired tenderness.
  7. Season generously with salt and pepper, and serve right away.

Notes

  • Consider using homemade chicken broth for a more flavorful soup.
  • Any type of beef can be used, like ground beef or beef stew meat.
  • Save time by using pre-cooked rotisserie chicken or leftover cooked chicken.
